chicken fajita omelette from blue benn

Back in Bennington. I had a meaty track workout this morning (hit my goal splits, so that felt great); Charlie went to the gym and had a push day. Afterwards, he and I were ready for lunch/breakfast, and swung by the Blue Benn diner (a popular local spot). I had a chicken fajita omelette with a side of homefries and cream cheese toast. I wasn't able to finish the meal, but what I did eat hit the spot.

The omelette was super cheesy, which was welcome. The egg was more placed on top of chicken and cheese than really containing it, which was fine. The chicken was seasoned lightly and cooked well, and blended well with the salsa and egg. There definitely wasn't enough egg.

The toast was very well buttered, and sized well. The homefries were pretty unremarkable, and I ended up not eating more than two or three. The omelette was well worth the trip, and if you're ever in Bennington, you should definitely come to this diner.
